Go WILD about food at the Eden Project

The Eden Project in Cornwall is offering food fans the chance to explore wild food with walks, talks and cookery demonstrations once a month until September.

Cornwall’s very own foraging expert, Marcus Harrison, who runs The Wild Food School, will be giving food talks and taking budding wild food lovers on exciting walks around the hedgerows, fields and lanes surrounding Eden. He will lead discussions on a range of wild foods including nettles, wild garlic, three cornered leeks, acorn flour and alexanders also known as horse parsley.

Marcus, who has a regular monthly slot on BBC Radio Cornwall, will also be showing Eden chefs how to cook delicious wild food from our countryside during cookery demonstrations during the spring and summer months.

Marcus said: “To be working in the midst of one of the world’s botanical centres of excellence is an absolutely magical experience.

“I feel lucky to have also been given the chance to explore wild foods further with catering professionals such as Tony Henshaw and his talented team.

“I hope our sessions over the next few months will inspire Eden visitors to be more creative in thinking about food, where they can source some of their ingredients from and see the outdoors in a new light.”

Tony Henshaw, Eden’s Head Chef who will also be taking part in the cookery classes with his staff said: “Catering is really excited to work with Marcus, foraging the countryside, exploring wild foods that we can use at Eden for culinary treats on the menus.

“This is a great opportunity for the team; to learn and have fun with Marcus and create new food dishes with wild foods from the hedgerows that have new tastes and textures.

“Some foods I am sure we will see and learn to cook with will be nettle, alexanders, wild gorse as well as dandelion and burdock to mention a few”.

The talks are taking place on May 7, June 4, July 2, August 6, September 3 and October 1. On the above dates talks start at 12pm and 1pm and the walk and talk on each day starts at 2pm.
